There is a particular version of summer that lives in a glass of cold peach iced tea.
Not the one from a bottle — that is just sweet and vaguely peachy and fine. The real one. Made with black tea steeped properly and a homemade peach syrup that smells extraordinary while it cooks and tastes like the inside of a ripe peach rather than a synthetic approximation of one.
This is that recipe. Twenty minutes of actual work, a batch of syrup that keeps for two weeks, and something in your fridge that makes every afternoon this week feel like it was handled.
What You Need
For the peach simple syrup (makes enough for 6-8 drinks):
- 2 ripe peaches, pitted and sliced — or 200g (1 cup) frozen peach slices if fresh are not at their best
- 200g (1 cup) white sugar
- 240ml (1 cup) water
For the iced tea (serves 4):
- 4 black tea bags — English Breakfast or Assam (Find quality black tea bags on Amazon →)
- 1 litre (4 cups) boiling water
- 4-6 tablespoons peach simple syrup, to taste
- Ice
- Fresh peach slices and mint sprigs to garnish
Short on fresh peaches? Frozen work just as well here — they are often sweeter than out-of-season fresh fruit and melt beautifully into the syrup.
How to Make It
Make the peach syrup:
- Combine the peach slices, sugar and water in a small saucepan over medium heat. Stir until the sugar dissolves.
- Simmer for 10 minutes until the peaches are very soft and the syrup is fragrant and amber-peach in colour.
- Remove from heat. Mash the peaches gently with a fork.
- Strain through a fine mesh sieve into a clean jar, pressing the peaches to extract all the syrup. Discard the solids.
- Store in the fridge for up to two weeks.
Make the iced tea:
- Steep the tea bags in the boiling water for exactly 4-5 minutes. Set a timer.
- Remove the tea bags without squeezing them — squeezing releases bitter tannins.
- Add 4 tablespoons of peach syrup while the tea is still hot. Stir well. Taste — add more syrup if you want it sweeter.
- Allow to cool to room temperature, then refrigerate until completely cold (at least 2 hours).
- Serve over ice in tall glasses with a fresh peach slice on the rim and a mint sprig.
3 Ways to Vary This Recipe
Make it sparkling — top each glass with a small splash of sparkling water just before serving. The fizz lifts the peach flavour and makes the whole drink feel more festive. This is the version for a garden party or a Sunday brunch table.
Make it a peach green tea — swap the black tea bags for green tea bags (2-3 minute steep at 80°C, not boiling). The lighter, grassier flavour of green tea with peach syrup is cleaner and more delicate than the black tea version. Beautiful if you prefer something less strong.
Make it a peach lemonade iced tea — add 30ml (1 oz) of fresh lemon juice to the batch alongside the peach syrup. The lemon brightens everything and gives the drink a slight sharpness that balances the sweetness of the peach perfectly. This is the Arnold Palmer variation nobody talks about but everyone loves when they taste it.
What Glass to Use
Peach iced tea is a soft, warm amber-peach colour — one of the most naturally beautiful drink colours there is. Show it off in a tall clear glass with as much ice as the glass will hold. The ice slows the dilution and keeps the colour vivid for longer.
For a more special occasion, serve in a stemless wine glass over a single large ice sphere. The colour reads even more beautifully in the wider bowl of the glass.
