This is the most quietly beautiful drink on the spring menu.
Not dramatic like the colour-changing lemonade. Not bold like the hibiscus punch. This peach rose mocktail is the one you make for moments that deserve a certain kind of softness — a bridal shower, a Mother’s Day morning, a solo Sunday when you want to feel like you are treating yourself properly.
The combination of ripe peach and rose water sounds like it could be too much. It is not, because of one small but critical piece of technique: the rose water goes in last, in drops, not spoonfuls. Rose water used wrong is perfume. Rose water used right is something you taste in the back of your throat and wonder what made everything taste so elegant.
This mocktail is completely non-alcoholic and is one of the most impressive-looking things you can put in front of someone without spending more than ten minutes in the kitchen.
What You Need
Serves 1 · Time: 8 minutes
- 1 ripe peach, pitted and cut into slices (or 80g/⅓ cup frozen peach slices, thawed)

- 1 tablespoon honey or agave syrup
- 30ml (1 oz) fresh lemon juice
- 150ml (5 oz) sparkling water
- Ice

- A fresh peach slice for the rim
How to Make It
- In the bottom of a cocktail shaker, combine the peach slices and honey. Muddle firmly until the peach breaks down into a rough, juicy purée. Do not rush this — you want to extract as much liquid and flavour from the peach as possible.
- Add the rose water and lemon juice. Fill the shaker with ice and shake firmly for 15 seconds.
- Strain through a fine mesh sieve into a short, wide glass or coupe filled with fresh ice. Press the back of a spoon against the strained fruit to extract every last drop of peach juice.
- Top with sparkling water and stir once, gently.
- Float a small pinch of dried rose petals on the surface of the drink. Place a fresh peach slice on the rim.
Take a moment before you drink it. It is genuinely beautiful.
3 Ways to Vary This Recipe
Make it alcohol-free rosé — replace the sparkling water with sparkling white grape juice. The grape juice adds a slight wine-like quality and a deeper golden-pink colour. For a bridal shower or Mother’s Day, this version has exactly the right feeling without the alcohol.
Make it frozen — blend the strained peach base with 1 full cup of ice until smooth and slushy. Pour into a coupe glass without sparkling water. Serve as a frozen peach rose slushie. Perfect for a very warm spring day.
Make it hibiscus-peach — add 30ml (1 oz) of cooled hibiscus tea to the shaker along with the other ingredients. The hibiscus adds a deeper red-pink colour and a slight tartness that balances the sweetness of the peach beautifully. The colour shifts from apricot-peach to a deeper blush-pink.
What Glass to Use
A coupe glass makes this mocktail look like something from a very good restaurant. The wide, shallow bowl shows off the blush-peach colour and the floating rose petals at exactly the right angle. It is the glass this drink deserves.
A short wide tumbler also works beautifully and is more practical for everyday use.
What to avoid: a tall narrow glass, where the beautiful colour disappears and the rose petals have nowhere to float elegantly.
